Shopkeepers
Set up custom villager shopkeepers that sell exactly what you want them to sell and for what price. You can set up admin shops, which have infinite supply, and you can also set up player shops, which pull supply from a chest.
It will also prevent any other trades with non-shopkeeper villagers, if you want it to.
For those who are simply looking for a convenient way to modify the trades of vanilla villagers (as an alternative to using complex Minecraft commands), the plugin also includes a graphical editor for regular villagers and wandering traders.

Supported server versions
Shopkeepers supports the latest versions of Bukkit / Spigot.
Note that this plugin is created to work with CraftBukkit (or alternatively Spigot). Bukkit does not have an API for some of the things necessary to make this plugin work. This means that other server software (Tekkit, Forge, Cauldron, etc.) will not work with this plugin.
Other CraftBukkit or Spigot derivatives/forks might work, but are not officially supported. So if you run into issues while using those, try to reproduce your issue on a fresh and up-to-date Spigot server first.

Statistics
This plugin uses bStats to collect anonymous plugin usage statistics. This helps me to determine how many servers are using the plugin, which Minecraft versions it is used with the most, and to which degree the different features are used.
Here is a list of all currently tracked information:
- Common information: The number of servers using the plugin, the number of players on these servers, online mode, Minecraft version, plugin version, core count, system arch, operating system, server country, Java version.
- Shopkeepers specific information: Whether specific related plugins are used (Citizens, Towny, WorldGuard, Gringotts, other Vault economy plugins), number of shops, whether player shops are used, whether certain features are enabled in the config (ex. WorldGuard/Towny compatibility, Citizens shops, delayed saves, colored names, chest protection, removal of inactive shops, tax rate, strict item comparison, purchase logging, disabling of other villagers, ..), the number of worlds containing shops.

If you want to disable bStats for all plugins on your server, edit the file plugins/bStats/config.yml, or alternatively disable it only for Shopkeepers by setting 'enable-metrics' to 'false' inside the Shopkeepers config.

Third-Party Add-On Plugins
Sometimes a feature is either to specific to include it directly into the Shopkeepers plugin, or I did not yet have the time to add something similar myself. The plugins listed here extend the functionality of the Shopkeepers plugin.
These plugins are maintained by other community members. If you run into issues while using any of these add-ons, try to first reproduce your problem without any add-ons before you report it.
ShopkeepersNavAddon(abandoned): Adds inventory-based GUIs that allow you to browse all player shops, all admin shops, and to find shops that trade a specific type of item. You can teleport to a particular shopkeeper by clicking a button inside the GUI.
This plugin also integrates support for trading with Vault-based currency, but does so by replacing Shopkeepers' normal trade handling.

Which GUI? The trading GUI or the editor GUI? Could be a plugin conflict (eg. if some other plugin blocks or prevents it). Turn on debug mode and check the output in the server log when you attempt to open the shopkeeper.
If you are using GriefPrevention, also restart the server and check if it works then.

Nope, not directly. There is support for Citizens shopkeepers. Citizens allows you to configure the NPCs with additional behavior. See https://github.com/Shopkeepers/Shopkeepers-Wiki/wiki/Citizens-Shopkeepers
This might be weird, but does this plugin give you the ability to disable certain enchants from vanilla villagers? For example, in the server I'm making I'm trying to disable all ability to get diamond gear, and that means I'd have to disable the Weaponsmith's Diamond sword and axe, the Toolsmith's diamond hoe, axe, shovel and pickaxe, and the Armorer's enchanted diamond armor trades.

Nope. You cannot reconfigure the vanilla Minecraft trades with this plugin.

They should not move by default (they are given the NoAI tag). WHich Minecraft and plugin versions are you using?
Also, make sure that you have actually created a shopkeeper and not a regular villager. If you are using the villager egg to create a shopkeeper, not that this will create re regular villager if you are in creative mode, or if the villager egg does not have the correct name (i.e. create the egg via '/shopkeeper give' instead).
Hi, on my 1.16.4 server all the shopkeepers are facing south, is there a simple fix for this?

Depends on how old your current version is. If there are too many versions in between, you might have to first update to the intermediate versions.
And as always make backups of your plugin data, just in case something unexpected goes wrong.
Found a annoying bug I hope it's something I can fix... Custom enchanted items doesn't work when the server restarts. Ex. I have enchanted bread that a player can trade for coins but when the server restarts the bread doesn't work. Tried to remove the enchant and only have lore on the item and that also didn't work after I restarted the server. Any help?

If by "custom enchantments" you mean non-vanilla enchantments: Those are not supported by Spigot and therefore problematic. The server does not know about them until after the plugin that adds them has been loaded. So when some plugin (such as Shopkeepers) loads an item, the server also has to load these enchantments, which fails if it doesn't not know about them yet. Since plugin load order is random, and you can also manually reload plugins, these enchantments may get lost after server starts or plugin reloads.
Regarding items with custom lore: In the past it depended on how you create the item, whether or not it will work after reloads. The issue was that Spigot expected the text data of items to be in a very specific format (which it often is not if you manually create these items, or if some plugin manually sets the text data instead of using Spigot's API to do that). However, this has been resolved a few days ago. So if you are having issues with items with custom display name or lore, make sure that you are using the very latest version of Spigot and then freshly setup your trades that involve these items.

That explains it... Im not really in to spigot so I don't really know how its made but that explains alot. I will try to update my PaperMC and see if it works and if it doesn't I at least know that it's not the plugins fault. Thx for the help!
Another question: Is there any way to allow the player set what type of ore they want to sell/buy stuff for kind of like how you can in the Admin Shop?
