Buildings unlock functionality.

Build a house, and eventually an NPC will move in. Build a Farm, and a farmer will move in. Build a Sheep Pen, and a Sheppard will come. Build a Tannery, and a LeatherWorker will come. Build a Bakery and a Baker will come, and start baking bread, cookies, cakes. Build a Shop, and a ShopKeeper will come and sell/buy things. Build a Post Office, and you can send and receive mail, including Parcels. Build a Forge, and a Blacksmith will come and sell iron weapons. Build a Bank, a banker will come and you can store things. With a Bank and a PostOffice, you can send money. Build a Train Station, and you can take trains,. With a PostOffice and a TrainStation, mail will move faster. Build a Telegraph Office, etc..
