Breaking a chest with a sign on it will drop the sign. Looking into several fixes for this. otherwise nothing else will drop anything on break if the mining option is turned off.
The latest RB of Bukkit: 1.0.1-R1 seems to break the auto remove function of the chests with this version. I am currently looking into it and should have a fix soon.
